When we first started this business, we had trouble selling our pancetta. To be frank, we had wanted another product that people were familiar and comfortable with using and ironically, that was just the problem. People regarded it (without having tried it obviously) as an expensive version of the slightly rubbery, mediocre pork product they buy from the supermarket to put in their carbonara. THEN…. we started doing tasters, letting people try it at farmer’s markets, perhaps telling them to cook it “low and slow” and almost caramelise it rather than chasing it round a super-heated pan for two minutes and calling it done. NOW we just can’t make enough of the stuff. It’s no surprise that being from the belly, the pancetta has a certain fat content and where our boar are concerned, they’ve had eighteen months for that flavour to develop within that fat. It sells itself now. Thyme, coriander, fennel, garlic, then some juniper to cut through the sweetness a little bit. A flavour explosion waiting to happen in your frying pan.
