Wild Boar Lomo with Asapargus

The simplest of seasonal ideas to whet the appetite.  Light and buttery, the warm lomo melts in the mouth.


50g Wild boar lomo

8-10 Asparagus tips


1) Boil your asparagus tips in water to your own desired texture.

2) Drain the water off of the asparagus tips and wrap a piece of wild boar lomo around each one.

3) When all the tips are dressed in lomo, place them on a grill rack and grill on a high heat for approximately 30 seconds OR place in a preheated oven for 30-60 seconds until the fat on the lomo becomes transparent.

4) Serve by itself or with a poached egg.

WARNING:  Keep checking the items under the grill/in the oven as they will overcook quickly!
